A Good Summer Breakfast

This recipe was submitted by Lizzie-one of our interns!

2 large eggs
2 large tomatoes
1/4 a white onion
1 clove of garlic
1 whole grain english muffin
a bit of olive oil for pan (or you can use pan spray for lighter)

you can also cut recipe in half and use one egg and 1/2 english muffin for fewer calories.

Begin by chopping the tomatoes and onions in small chunks. Dice garlic.
drizzle olive oil (or pan spray) into a sauce pan.  Place in sauce pan over medium
heat and saute. Poach the two eggs. Toast the english muffin. When Eggs
done, place on top of a slice of the english muffin and cover with
tomatoes, onions and garlic. Delish!!!!!
