Seasonal Foods?

March 27th, 2008 · No Comments

Most fruits and Vegetables are available year round but there are specific times of year when certain fruits and vegetables are at their best.

A few of my favorites are strawberries and Spinach, which are getting to the height of their prime right now.

Strawberries: fun and versatile a fruit that tastes good and is good for you. This food is very low in Saturated Fat, Cholesterol and Sodium. It is also a good source of Folate and Potassium, and a very good source of Dietary Fiber, Vitamin C and Manganese.

Spinach: This food is low in Saturated Fat, and very low in Cholesterol. It is also a good source of Niacin and Zinc, and a very good source of Dietary Fiber, Protein, Vitamin A, Vitamin C, Vitamin E (Alpha Tocopherol), Vitamin K, Thiamin, Riboflavin, Vitamin B6, Folate, Calcium, Iron, Magnesium, Phosphorus, Potassium, Copper and Manganese.

one of my favorite recipes that gets the best of both worlds:

Spinach and Strawberry Salad

1 bag baby spinach-washed and dry

1/4 purple onion sliced

1/2 red bell pepper sliced

1 small package fresh strawberries sliced

1/4 c Low fat feta cheese

1/2 cup roasted hazelnuts

top with: no fat Balsamic vinagarette dressing

Toss all ingredients together in a bowel and top with desired amount of dressing.

Enjoy!
